I started my Cannabis Cuisine journey with 25 years of culinary experience but absolutely zero knowledge of how cannabis would work with food. After a lot of research, knowledge seeking and conversations with people way smarter than me, I started working on infusions and dosing.
I made a lot of mistakes and had some very mixed results with flavour balance and THC percentages. Some of my “mistakes” were a lot of fun, and some of them planted me firmly into my couch while I waited for the massive amounts of THC in my body to release me from it’s grasp!
With Your Canna Chef, I hope to pass along what I have learned, and am still learning, about cooking with this fantastic plant! Hopefully I can help you avoid some of the mistakes I have made along the way. My very first piece of advice is to take it slow... start with lower THC levels than you (or your ego) think is necessary to give you the results you are looking for. It is easy to add more, but impossible to reduce the level once it leaves your fork.
The very first thing we need to do is create safe and predictable infusions... so let’s get started on that. Know your weed... the easiest way to do this is to purchase your cannabis from a legal dispensary. On the packaging the name, weight and THC or CBD percentages are all listed.
Use our Infusion Calculator when making your infusions. With this tool you can plug in the type of cannabis, THC (or CBD) percentage and the amount you are using in your infusion, and it will spit out a relatively accurate number of milligrams of THC or CBD that each tablespoon of your infusion will have.
This is much less expensive than either owning testing equipment or sending your infusion to a lab for testing. At Your Canna Chef we own testing equipment, and we check each of the infusions we make with both our calculator and our tester to ensure accuracy.
For personal use, I recommend making infusions 1 Cup at a time. If you follow our recipes your oils or butter should contain between 20-30mgs of THC per tablespoon. Starting with small batches with relatively low amounts of THC will allow you to control your dosing and discover your comfort zone safely. The best part of starting small is that you aren’t going to need much flower to find success. I use 2.5 grams of cannabis per cup of oil in my infusions and test out at 24-26mgs of THC per tablespoon depending on the strain of cannabis I am using.
