Dosing:

Control your THC and CBD intake by measuring your salsa and guacamole. (see our recipes for infused salsa and guac!)

Ingredients:

2 medium flour tortillas

250g large shrimp, peeled and deveined

1 tablespoon taco seasoning

1/2 cup cooked rice

1 cup shredded lettuce

1/2 cup THC-infused salsa (store-bought or homemade)

1/2 cup CBD-infused guacamole (store-bought or homemade)

Cooking spray


Optional toppings: diced tomatoes, sliced jalapeños, sour cream, shredded cheese


Instructions:

Step 1 - Preheat the Oven:

Preheat your oven to 180°C (350°F).

Step 2 - Shape Tortilla Cups:

Lightly spray the outside of two drinking glasses with cooking spray. Place each flour tortilla over a glass, gently pressing it down to form the shape of the glass. Transfer the tortilla-covered glasses onto a baking sheet.

How to make Tortilla Cup

Step 3 - Bake Tortilla Cups:

Bake the tortilla cups in the preheated oven for 8-10 minutes or until they are golden brown and crispy. Remove from the oven and carefully remove the tortilla cups from the glasses. Set aside to cool.

Step 4 - Prepare Shrimp:

In a bowl, toss the peeled and deveined shrimp with taco seasoning until evenly coated.

Step 5 - Cook Shrimp:

Heat a skillet over medium-high heat and add a little oil. Cook the seasoned shrimp for 2-3 minutes per side until they are pink and cooked through. Remove from heat and set aside.

Step 6 - Assemble Salad Cups:

Divide the cooked rice evenly between the two tortilla cups. Top each with a layer of shredded lettuce. Divide the seasoned shrimp between the cups, placing them on top of the lettuce.

Step 7 - Add Salsa and Guacamole:

Spoon THC-infused salsa and CBD-infused guacamole over the shrimp in each cup.

Step 8 - Garnish and Serve:

Garnish the Mexican Spiced Shrimp Salad Cups with optional toppings such as diced tomatoes, sliced jalapeños, sour cream, or shredded cheese.

Step 9 - Serve and Enjoy:

Serve the salad cups immediately while the tortillas are still warm and crispy. Enjoy the delicious flavours of the Mexican-inspired ingredients in each bite!
