Dosing:
Rather than infusing the quesadilla itself we elected to serve it with our THC infused salsa and CBD infused guacamole. We know that ½ cup of salsa contains 5mgs of THC and ½ cup of guacamole contains 5mgs of CBD.
Ingredients:
2 cups cooked chicken, shredded or diced
1 cup shredded cheese (such as cheddar, Monterey Jack, or a Mexican blend)
4 large flour tortillas
1/2 cup THC infused salsa
½ cup CBD infused guacamole
2 tablespoons vegetable oil or butter
½ red bell pepper, sliced thin
½ white onion sliced thin
Instructions:
Step 1:
Sautee onion and peppers in 1 tablespoon of oil.
Step 2:
In a mixing bowl, combine the cooked chicken and shredded cheese.
Step 3:
Lay out two flour tortillas on a clean work surface.
Step 4.
Divide the chicken and cheese mixture, onions and peppers evenly between the two tortillas, spreading it out evenly over one half of each tortilla.
Step 5.
Fold the other half of each tortilla over the filling to form a half-moon shape.
Step 6.
In a large skillet, heat the vegetable oil or melt the butter over medium heat.
Step 7.
Once the skillet is hot, carefully place one quesadilla in the skillet. Cook for 2-3 minutes on each side, or until golden brown and crispy, and the cheese is melted.
Step 8.
Repeat with the remaining quesadilla.
Chef Notes:
Remove the cooked quesadillas from the skillet and let them cool for a minute before slicing them into wedges.
Serve the chicken quesadillas hot, with additional salsa, sour cream, or guacamole for dipping if desired.
