How the Infusion Works

Before dinner begins, I sit with each guest individually
to understand their comfort level, experience, and desired effect.

Some guests want to feel soft and relaxed.
Some want a light creative glow.
Some prefer a microdose.
Some choose no infusion at all.

Everyone is in control of their own experience —
and I guide dosing one-on-one throughout the meal
so the night feels exactly right for every person around the table.

Why have set menus?

These menus were designed to feel like a complete experience — flavours, textures, timing and infusion all working together. A set menu allows the evening to unfold naturally, without decisions or interruptions, so the table can simply enjoy the night. It keeps the pacing smooth. It keeps the food focused and intentional. And it allows me to cook with precision and presence — rather than juggling multiple dishes at once.


The result is a dinner that feels cohesive, warm and deeply satisfying — something shared, not ordered.
