Dosing:
We used 3 tablespoons of infused butter with 27mgs of THC per tablespoon, giving us 81mgs of THC in the recipe. Our recipe yielded 6 portions giving each portion with a comfortable 13-15mgs of THC.
Ingredients:
1 sheet of puff pastry, thawed
2 cups cooked chicken, diced
1 cup mixed frozen vegetables (carrots, peas, corn)
1 cup fresh vegetables (such as diced carrots, celery, onions)
3 tablespoons THC-infused butter (adjust potency according to preference)
3 tablespoons all-purpose flour
1 ½ cups chicken broth
½ cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1 egg, beaten (for egg wash)
Step 1: Let’s Get Started
Preheat your oven to 375°F (190°C).
Step 2:
In a large skillet, melt the THC-infused butter over medium heat.
Step 3:
Add the fresh vegetables to the skillet and sauté until they start to soften, about 5 minutes.
Step 4:
Sprinkle the flour over the vegetables and stir to combine. Cook for an additional 2 minutes to cook out the raw flour taste.
Step 5:
Slowly pour in the chicken broth while stirring constantly to avoid lumps. Allow the mixture to simmer and thicken for about 5 minutes.
Step 6:
Stir in the heavy cream, dried thyme, dried rosemary, salt, and pepper.
Step 7:
Add the cooked chicken and mixed frozen vegetables to the skillet. Stir well to combine everything evenly. Let the mixture simmer for another 5 minutes. Taste and adjust seasoning if necessary.
Step 8:
Transfer the chicken and vegetable mixture to a baking dish.
Step 9:
Roll out the thawed puff pastry sheet on a lightly floured surface to fit the size of your baking dish.
Step 10:
Place the puff pastry over the chicken and vegetable mixture in the baking dish, trimming any excess pastry if needed. You can also create a decorative pattern on top if desired.
Step 11:
Brush the beaten egg over the puff pastry for a golden finish.
Step 12:
Make a few small slits on the top of the pastry to allow steam to escape while baking.
Step 13:
Place the baking dish on a baking sheet (to catch any potential drips) and bake in the preheated oven for 25-30 minutes, or until the puff pastry is golden brown and the filling is bubbling.
Step 14:
Once baked, allow the pot pie to cool for a few minutes before serving. Enjoy your THC-infused chicken pot pie with puff pastry! Remember to consume responsibly and be mindful of dosage.
