Ingredients:
Arctic Char with Pesto Crust:
2 Arctic char fillets
2 tablespoons THC infused basil pesto
Salt and pepper to taste
Garlic Roasted Potatoes
4 medium-sized potatoes, peeled and cut into bite-sized chunks
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Sauteed Green Beans
200g green beans, ends trimmed
1 tablespoon olive oil
2 cloves garlic, minced
½ white onion, sliced
Salt and pepper to taste
Instructions:
Arctic Char
Step 1:
Preheat your oven to 375°F (190°C).
Step 2:
Pat dry the Arctic char fillets with paper towels and place them on a baking sheet lined with parchment paper.
Step 3:
Season both sides of the fillets with salt and pepper.
Step 4:
Spread a tablespoon of basil pesto evenly on the top side of each fillet, forming a crust.
Step 5:
Bake the fillets in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork and the crust is lightly golden.
Garlic Roasted Potatoes:
Step 1:
In a large bowl, toss the potato chunks with olive oil, minced garlic, salt, and pepper until evenly coated.
Step 2:
Spread the seasoned potatoes in a single layer on a baking sheet.
Step 3:
Roast in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and tender, flipping them halfway through the cooking time for even browning.
Step 4:
Once done, transfer the roasted potatoes to a serving dish, garnish with chopped fresh parsley if desired, and serve hot.
Sautéed Green Beans:
Step 1:
Heat olive oil in a large skillet over medium heat.
Step 2:
Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
Step 3:
Add the green beans and onions to the skillet and toss to coat them evenly with the garlic-infused oil.
Step 4:
Season with salt and pepper.
Step 5:
Sauté the green beans for 5-7 minutes, or until they are tender-crisp and bright green.
Step 6:
Once cooked, transfer the sautéed green beans to a serving plate and serve immediately.
