Carrot Ginger Soup

Carrot Ginger Soup


Infusing the soup itself can be done, however, we prefer to control our dosing more accurately by dosing the sour cream that is added to the soup at service. We used ¼ tablespoon of THC infused olive oil in our sour cream giving each bowl of soup 6.5mgs of THC.


1 lb. (450g) carrots, peeled and chopped

1 onion, diced

2 cloves garlic, minced

1 tbsp. ginger, minced

4 cups (1 liter) vegetable broth

1 cup (240ml) coconut milk

2 tbsp. olive oil

1 tsp ground cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Infused sour cream:

1 cup sour cream (use a ¼ cup of the infused sour cream per bowl of soup)

1 tablespoon cannabis-infused olive oil (adjust to desired potency)

Salt and pepper to taste

Fresh chives or green onions, finely chopped (optional, for garnish)


Step 1:

Heat olive oil in a large pot. Sauté onion until translucent, then add garlic and ginger, cooking until fragrant.

Step 2:

Add chopped carrots to the pot. Season with ground cumin, salt, and pepper. Stir well.

Step 3:

Pour in vegetable broth. Bring to a simmer and cook until carrots are tender, about 20-25 minutes.

Step 4:

Use an immersion blender or transfer to a blender to puree until smooth.

Step 5:

Return soup to the pot if needed. Stir in coconut milk and warm through.

Step 6:

In a small bowl, combine the sour cream with 1tablespoon of cannabis-infused olive oil. Mix well until fully incorporated. Adjust the amount of infused oil according to your desired potency.

Step 7:

Taste the THC-infused sour cream and add salt and pepper to taste. Mix well to combine.

Step 8:

Once the ginger carrot soup is ready, ladle it into bowls. Top each bowl with a dollop of THC-infused sour cream.
