Ingredients:
Filling:
6 large Granny Smith apples, peeled, cored, cut into 1” chunks
1 teaspoon ground cinnamon
1/2 cup brown sugar, packed
2 tablespoons cornstarch
1/4 cup water
2 tablespoons of infused butter
Crust:
1 Sheet of puff pastry
1 egg, beaten
Instructions:
Step 1:
In a large mixing bowl, combine the chunks of Granny Smith apples with ground cinnamon, ensuring that all the apple slices are evenly coated.
Step 2:
In a separate small bowl, whisk together the brown sugar and cornstarch until well combined.
Step 3:
Transfer the coated apple slices to a large saucepan and add the brown sugar-cornstarch mixture to the apples. Toss the apples gently to coat them evenly with the sugar mixture.
Step 4:
Pour the water over the apple mixture in the saucepan. This will help create a syrupy sauce as the apples cook.
Step 5:
Place the saucepan over medium heat and bring the apple mixture to a gentle simmer, stirring occasionally. Once simmering, add your THC infused butter.
Step 6:
Allow the apples to cook for about 5-7 minutes, or until they start to soften slightly and the sugar mixture thickens into a glossy sauce, coating the apples evenly.
Step 7:
While apples are cooking, roll out your puff pastry with a rolling pin.
Step 8:
Using an oven proof bowl, cut out 4 circles from your pastry.
Step 9:
Cut 4 small slices in each circle.
Step 10:
Once the apples are cooked to your desired consistency and the sauce has thickened, remove the saucepan from the heat.

Let the apple pie filling cool slightly before using it.
Step 12:
Fill individual oven proof bowls with the filling and wet the edges of the bowl with a beaten egg.
Step 13:
Cover your filling with your puff pastry and seal along the rim of the bowl.
Step 14:
Brush each crust with egg wash before placing in a 400 degree oven for 11 minutes.
Step 15:
Remove from oven and serve immediately, or cool and serve when desired.
